Title: Diane's Almost Knishes

Yield: 1 Servings

4 Eggs
1lbSmall Curd Cottage Cheese
4 Heaping Tblsps sour cream
1cBisquick Buttermilk mix

beat eggs well, add other ingredients, beat well. Divide mixture in half, set aside.

1. 1 large onion 1 1/2 Tbsp sugar 2 Tbsp butter or margarine

saute together slowly until the onions are golden and very soft. This should take about 20 minutes or more.

2. 1 package pre-grated cheddar (recipe doesn't specify size pkg or whether it's sharp or mild...you're on your own here. Seems to me I used 6 or 8 oz pkg of medium cheddar.

add the smothered onions to 1/2 the batter, the cheese to the other half.

bake in VERY well greased mini-cupcake tins at 350degrees for 25 mins. or until golden brown. Loosen, tip onto a paper towel to drain excess butter.

serve warm...or freeze them in single layers. heat frozen ones on a cooky sheet in a 350 deg. oven for about 15 minutes.

(my favorite were the onion, sometimes I double that filling and make 'em all like that.) As I remember, the recipe makes about 4 dozen, but it's been awhile, so I can't be sure.
